Soffritto is, for Italians, the holy trinity of Italian cuisine. In this lesson, you will learn how to prepare and cook a perfect Italian soffritto. Used commonly when creating soups, sauces, stews, or braises, it includes onions, celery, and carrots in a 2:1:1 ratio. Soffritto is the Italian word for “under-fried” or “fried slowly” and perfectly describes the process of gently cooking vegetables in oil to soften them and release their flavour.
